It'd be easier to recommend writers if you could specify the subject of theory you're most in reading; however, most introductory courses on theory and criticism seem to begin with Formalism (and/or New Criticism specifically), with maybe a brief overview of hermeneutics and phenomenology. From there, classes usually cover Semiotics and Structuralism, Psychoanalysis, and Marxism before diving headlong into Post Structuralism (and Deconstruction) and the /lit/ bogeymen Cultural Studies and Feminist, Queer, Postcolonial, and Race theories. But I've seen classes start far earlier with Plato, Aristotle, and Horace; Hume, Kant, and Burke. Generally, an anthology of theory and criticism will include all of this and more. Norton's is the best I've handled; though, Rivkin and Ryan's is also good.
