Why is it that this fella won't ever finish his series? Is he comparable to Rowling in that he doesn't believe in anything and that ultimately his story, however appealing, was doomed to collapse into its own nihilism?

He’s collapsing under the pressure of trying to live up to the hype, constantly second guessing himself as he continues to write the next novels. Honestly, it’s the worst position to be in as an author since it stifles creativity and ultimately will lead him to do what the fans want and expect instead of what he originally had in mind.

Tolkien on the other hand was pretty unknown in his day, at least compared to what became Tolkien mania several decades after he wrote the Hobbit and LOTR. So he was free to do what he wanted, and they genuineness shoes through in his work.

He doesn't really write narrative. He writes characters. If you listen to him talk, it seems like it's mostly Tyrion and Daenerys doing what they will more than him writing a story. The problem with that is that it makes the story sort of endless. Not sure I could come up with one either.

He fucked up the story structure in A Feast For Crows, it was supposed to take place 5 years after A Storm of Swords and Daenerys is already in Westeros. Some retard advised him to scrap it and drag the story out longer for more shekels and Martin expanded the story too much and now has too many characters and subplots that he doesn't know how to satisfactorily resolve.

I hear fans say this all the time, but personally, I feel like a lot of side characters who were introduced in book 3 or later are going to start dying off sometime in Winds. Characters like Areo Hotah, Victarion, the Damphair, Arianne, Asha, and pretty much anyone else who's even vaguely expendable will drop like flies.

This. He expanded the universe way too much after storm of swords, considering he is around 70 years old.
If he was 40 it wouldn't be a problem.
Now with his age, he might be lost in his own universe.
Only good thing to do would be to contract the universe again, even if it meant lots of unresolved issues. Hardcore fans will be crying, but at least the majority of readers would be satisfied by having a clean ending, and some last epic moments.
