Bad pizza retains its exact shape and taste as it had when you reheat it.

Good pizza tastes considerably worse when reheated.

Is there any literature on this unexplainable phenomenon?

Shitty pizza uses shitty stale ingredients so they taste just as bad stale as fresh. Good pizza uses good quality ingredients that are actually fresh to begin with and so aren't so good stale
