So in Dune, it's told that the Fremen use immeasurable amounts of spice to bribe the Guild to stop other houses from putting up satellites to spy on Arakkis.
Why didn't they just use this wealth to buy water?

The fremen are nomads, if they started purchasing water then they'd end up reliant on it. The second they are reliant on the Guild, they have them and their way of life is threatened. They are also proud people who don't want their children to become weak.
