If I said rock, would that have been a proper description? No. I don't know what math rock and shoegaze are specifically, and I don't see the need for them, but I understand the need for terms like "punk rock," "indie," and "folk." I don't like "emo" either, but the bands I label as that don't fit under rock or punk rock, and if I called them indie like I usually do, people would've assumed I meant Death Cab or The Shins.
I like to be precise when describing my tastes. The same applies to lit and art. I see nothing wrong with that, to a point. It has nothing to do with fashion.

However classics/fiction/nonfiction is not the equivalent of classical/jazz/rock. That would be something like classics/scifi-fantasy/contemporary.

But not for someone to say "i like [subgenre]" because that would mean you like those bands/books because of the stylistic things associated with them, rather than the actual songwriting/prose. & that's why shitty bands & author can make a living riding off the genre because it's easy to imitate the style whether or not your actual work has substance.

Classical, Rock & Jazz are so different in their actual content though, more than just descriptive features. Chances are a person listens to one more than they do others.

Distinguishing what you listen to out of R/J/C is actually useful in demonstrating what you like. Using made up genres like "indie" or "math rock" which is just a few stylistic changes compared to other rock genres is really unaccurate unless your tastes is wholly based on a musics style.

There are some other Scottish bands that I really like. Mesa Verde, Kaddish, Avast!, Archives. These are all emo/screamo bands, though, so I don't know if you like them at all.

I usually just explore lots of bands from different genres and copy whatever moves me.

It can be Pink Floyd, some local unknown jazz band, Interpol, Mastodon, Schubert, Faunts, Infected Mushroom, J-rock, whatever.
I usually find something I like, listen to it for a couple of days/weeks and switch to something new when I get tired of it.

Varies a lot. I'm not really into specific genres, if an artist or a particular song is to my liking, I'll listen to it. Lately I've been listening to a lot of drum and bass: Noisia, Spor and Black Sun Empire in particular. Metal also: Meshuggah, Mokoma, Apocalyptica etc. And there's the occasional classical piece. I even listen to some trance, dupstep and dark toned electro from time to time. Radiohead now and then, Tool, Muse, Portishead, DJ Krush, Massive Attack, Hans Zimmer, Pendulum, Venetian Snares etc...
