Watership Down, Black Beauty, a whooooole lot of 'genre fiction' like Rats of NIMH, Warriors, Warhorse, or Redwall. There's one chapter from a horse's point of view in some Russian novel, I don't remember which...C&P? Not sure.
Technically Animal Farm, but not really.
Kipling has a lot from animal perspectives. Bit kiddish though.
