Would Harry Potter have been a more interesting series if the houses all had something to offer?
I find the series really sticks to Gryffindor good, Slytherin bad, other two don't matter. I think the books are less interesting because of it, I would have liked if the main characters, and historically good wizards, weren't all Gryffindors.

I'd say the whole reason for including the other two houses is for the sole purpose of variety. If it were simply "Us vs. Them" the whole time, the story would be pretty dry and get old rather quickly. At the very least, it brings into question, for instance, "What if any of the main cast (Harry, Ron, Hermione, et al) was of a different house? How would that have impacted the story?"

How do you think thing a would have changed had the main trio been in different houses? The biggest thing I can think of is that a lot of their plotting would have needed to take place outside the Gryffindor common room.
Also, how would their other friendships have played out? Neville, and to an extent Seamus and Dean are kind of the "extended" friend group.
Who would they have befriended had they not all been Gryffindors?

The main problem with that shit series is great potential in lore that was flushed down the characterization toilet. First, romance is utter crap. Making Draco a female and pushing a rivalry/attraction narrative would've improved it significantly. Next is dumb plot holes with time travelling and other unexplained crap. But seriously, the magical world was so potentially great with history of magic taking possible roots in Assyria, the trio (or not necessarily the three of them, since Ron was a useless piece of shit), finding actual ancient artifacts, etc. Shit would write itself for at least 20 more books. But no, Rowling is a hack who can't write for shit, so no. Harry Potter is the GREATEST wasted potential in the history of literature.

It would have allowed for further exploration into, and further development of, those houses' reasons for being. Kind of like as is said in OP's post, we're left with, "Okay, the other houses exist. So what?" Like >>11805989 says: just lots of wasted potential. At the same time, if what I've said were the case, JKR would have had to write God-knows-how-many-more books to fill in God-knows-how-many-more plot holes on top of the ones that already exist, so I get it.
