If Stormlight Archives gets an anime, people would start shitposting about Western novels being worse than LNs. And in Stromlight's case it's justified, it's full of asspulls and deus ex machinas. The magic stystem is at best average, the characters are boring, the only decent thing is the world building.
It's also a bad choice for a visual medium (large parts of the first 2 novels are set in the Shattered Plains (barren rocky land)) .

What is the appeal of Brandon Sanderson? The appeal of GRRM is easily apparent: its gritty, tones down the fantasy to only a few key elements that rarely show up, and deconstructs tropes. You can hate him for doing these things, but his appeal is easily articulated.

He's pretty good at world-building, and doesn't fall back on the medieval europe base setting that every major modern fantasy author uses. While perhaps not amazing and detailed, the magic systems he designs are pretty logical and have a decent amount of depth, and are used creatively by Sanderson. I haven't read all of his work but i know i only managed to stay invested in Mistborn the whole way through because i liked how the magic was utilised and developed throughout the series
