Music is such a prevalent force in our lives and is the fulcrum of art for millions. Of course there are music theory books, etc. but I haven't heard of any "philosophers of music". Can anyone point out figures to me?

Philosophers who write about music? Schopenhauer, Adorno (arguably not a philosopher)

Today just read the science behind it. Basically our brain evolved to enjoy (release serotonin, dopamine and the like) when perceiving signals of order, as it was evolutionary advantageous. Good artistic music we enjoy is the combination of tone, pitch, etc that resonate in an orderly way inside our auditory system. Some people have different physical hearing capacities and different memories/experiences that modify the serotonine release so we all develop different tastes in music.

There isn't much to philosophize after this.

the fact that music has a primal function to it negates any need to philosophize it? taste being so diverse and nuanced would be all the more reason to study it. jazz, classical and noise all exist and there's somehow nothing to read into culturally or socially or aesthetically because it's strictly biological. ok
