I have about 240 000 words in my final manuscript. It could possibly split into two books? Should I do this?

Why? 240k is around 600 pages, nothing wrong with that.

I have been told to get it down to 80 000 to 100 000

the longest Harry Potter book is 257 045 (the fourth) pages though and the shortest is 76 944 (the first) so I don't know what range to be work with at this point

The longest Harry Potter book is the fifth and it has over a thousand pages.

You're also forgetting that HP is children's fantasy so the words on the page are printed in like size 18 font.
