It's actually not hard to figure out since there were people who could write and they didn lay down mentions to words that rhyme with each other or used puns. So from things like that we know what words sounded alike at the time and to find out exactly how they sounded we can look at various dialects that either use those same puns or in which those words still rhyme or even use ancient texts in their original form that were copied and translated by the Byzantines, often with notes on pronunciation in relation other languages.
