Start and finish with either Shadow over Innsmouth or At the Mountains of Madness.
It's worth reading at least one of his works, but his style gets repetitive.

Never start with Mountains of Madness. It lays things out explicitly what was hinted at in previous stories. That story should be read almost last.

Dagon is a good place to start. It's the first story in the Cthulu mythos and it's quite short.
