Because Plato wrote two different kinds of dialogs — half that worked more or less as transcriptions of conversations Socrates had, and half that used Socrates as a mouthpiece for Plato's own philosophy. I'm glad you can distinguish between the two, anon! Hopefully you can appreciate the beauty of each.

Because he actualy had rigorously thought beliefs and doctrines. The idea of him "knowing nothing" is a meme. Here's what he actually said:
"that what I do not know I do not think I know either." That is, when he doesn't know something he doesn't pretend that he does know it. He's clearly not saying that he doesn't knownanything.
