How exactly does one learn to recognize, identify and appreciate aesthetics in literature?

Not sure what you're looking for outside of reading a lot and reading varied authors. Take note of the words they choose and words they choose not to use. The length of sentences and how that relates to the overall flow of the overall narrative, what imagery they choose to evoke. Just pick apart everything you read by various metrics, find what appeals to you and what doesn't. I'm big on overall aesthetics and "atmosphere" I'd pick a book that was beautiful or vivid to read over, something that evokes a strong emotional response (emotional as in I relate to them, not just dislike/ like the ideas) over a book with a better actual story line 9 times out of 10.
