"Mutiny on the Bounty" by Charles Nordhoff and James Norman Hall, the book all the movies are based on.

"The Sword and the Scimitar" by David Ball also contains a good deal of stuff about maritime adventures, although it is mostly about the Siege of Malta. An absolutely outstanding historical novel though, highly recommended. Beats the Ken Follett cathedral shit by miles IMHO.
