Hey y'all, I've always admired anime protagonists (like my king GOKU) who, no matter how strong their opponent and how unlikely victory seems, are always determined in their goals of overcoming adversity. It's a kind of strength I've always admired, but never been able to wield for myself, and was hoping you fine intellectuals could point me towards some self-improvement literature that could help me tap into any latent potential I may have.
Thank you in advance!

Reading won't cultivate willpower, only action will. But fortunately for you I am excellent at this mental strength.

One very very simple exercise is fasting. Especially if you've never done an extended fast before this one thing will teach you to exercise your willpower. Start with a basic 24 hour fast. Doesn't matter when or how you start, but for 24 hours just drink water. Next push for 48 hours, after the initial like 8 hours of hunger it's really quite easy. And I swear once you overcome the temptation to eat its like your mindset levels up, it's noticeable how different you feel. There's a reason so many religions across the world emphasize fasting as a spiritual technique to get closer to God.

Another great method is running. No idea what your fitness level is but set for example being able to run for 1 mile nonestop and time yourself. Then start working on getting your time down or your distance up. Making noticeable improvements for long distance running is as much about conditioning your mind to keep pushing when your legs get tired as actually training your cardio.

But the main point I'm trying to make here is you gotta learn how to learn. Like learning critical thinking, but these 2 exercises will give you a platform to noticeably grow your willpower and then you can start flexing this muscle in daily life. You won't just read about willpower and understand until you've been there and pushed through and seen the growth for yourself and noticed how it changes your perspective.

Willpower is cultivated only through action, OP.

To begin, choose an everyday habit that you would like to cultivate and then set your mind to doing it everyday without ever stopping.

Slowly, month by month, you can add more habits and routines to structure your life. Think of willpower as a "muscle" can can be strengthened or atrophied. Habits and routines are the food and exercise needed to strengthen your resolve. In time, you will master more and more of yourself and you will be able to will yourself to do things despite their great difficulty

Literally just do it, faggot. There is no secret willpower, you can do it so do it.

Sounds a bit like shitpost but I'll bite.
You won't develop strong will from books. Reading about stuff may motivate you but in the end it's up to you to hold your course despite difficulties till your stuff is done (but also know when your course is leading nowhere and your goal is bullshit).
I guess, especially since you want to keep to Dragonball-like themes:
For just stories you can check a lot of wuxia and xianxia novels or progression fantasy genre in general, but that is more of a light read for fun. A Thousand Li and Cradle are two best series I found in the genre (yes, I've read a lot, not my fault those two authors do better than most native chinese whose work I've seen translated).
Otherwise, if you care about self-improvement but want to keep it still in asian themes, actual qigong and neidan practices will help you maintain physical health and also strengthen your control on your mind. Start with Eight Pieces of Brocade by Yang jwing-Ming, Jwing-Ming Yang - pretty good, basic introduction into one of the most popular qigong exercise sets as well as traditional chinese medicine and cosmology in general.
