Mort is hands down my favorite book, the rest of the Death series is okay, but Mort is top-tier.

When I was young I liked Rincedwind and the academy. Later, I loved the Nightwatch. But at the moment I'd love the wizards, I guess. Haven't read any Pratchett in six years.
