I can speak highly for the Madinah Book Series, Thackston's Introduction to Koranic and Classical Arabic, Jones' Arabic through the Qur'an, and the al-Kitaab fii Taa'lum al-Arabiyya series (starting with Alif Baa).

The latter is what we use at my college. After you get the basics down from a textbook, you can always hone your skills by focusing on more specific texts or activities, for example al-Ajrumiyya for grammar or reading works in Arabic for reading skills or listening to the news or watching cartoons for listening and vocab.

At first, my interests stemmed from a fundamentalist sort of point of view, that I had to refute it by any means.
