Are these editions of Aristotle good? I know they are the complete works, but I've read that they lack critical apparatus, that the translations are quite "classic" (not to say "old"), and that the introductions are not very thorough.

Are there better options for the essential works (Politics, the two Ethics, Metaphysics, Organon, etc) packed in one volume or is this the best I'll get for the price?

No the translations are honestly the bottom of the barrel, archaic and worthless. Just go with individual books, for example this one is great, http://www.bookdepository.com/Nicomachean-Ethics-Aristotle/9780872204645
