For the most part Eisenman isn't talking about structure, it's more to do with how we recognise parts of architecture. I mean I'm not that au fait with Eisenman but I'll give my understanding. So with deconstruction with text we construct meaning from the text which is our (forms our?) locus of presence, where we and the words on the page meet and create a meaning, and then we can look for points where things don't fit together (destabilising) and look for a new or different meaning. If you want to deconstruct a building you can view it as a kind of gestalt, like you know those are stairs, that's a handrail etc and how they fit together. There's also the idea that we can often judge by sight (and if not other perceptions) the structural quality of a building in a similar way, and I think this is what he's getting at with the load bearing column business. So this gestalt can form a locus of presence as you make a reading of the building and attribute meaning, and under certain circumstances it can be destabilised as well. Tbh I think the load bearing column bit is either him going dead wrong or he's talking about a particular kind of structural art. That he's buddies with Koolhaus makes me think latter but the way he talks about it is a bit odd.

Then there's deconstruction of the act of architecture itself and that's where he's talking about turning a building or a process into text and having that discourse or reflection.

If you're going to read Koolhaus you should probably have a look at Cecil Balmond too, they worked together a lot and it's a bit like if you read Renzo Piano you should probably look at Peter Rice. Just bear in mind that his early book on the number 9 is not particularly clear with mysticism shit everywhere, has a middling narrative story running through it and is embarrassing to read (pic related). When I read it on a train I noticed another reading qt checking me out and she was noticeably turned off after like a second of looking over my shoulder.

Or if you want to have a look at the structural art side of things the Felix Candela lectures are decent and one of the essays is written by Balmond. Gives you a nice broad overview and plenty of jumping off points so you might prefer that.

There's an awful lot out there on phenomenology which is somewhat related to deconstruction and the metaphysics of presence. I recommend looking at Bachelard's Poetics of Space, Steve Holl is quite accessible in general, and K Michael Hays I remember enjoying and being fairly straightforward. Hays has edited a collection of essays on somewhat recent architecture and it's called something ending in 1968. Architecture since 1968? Or Architectural theory since?

Also Simulacra and Simulation does pop up every so often and I like the Situationists and Walter Benjamin, they can sort of enrich your understanding of some parts. Plus I like reading Will Self and the Situationists give me a good excuse. At this point tho I'm getting further away from the original point and could probably list a million other things to look at, so I'll finish with: remember that this sort of thing isn't terribly common for architects to know in depth. Something like green architecture or the kind of architecture sans frontiere business is more common to know ime. It's all useful tho.

I would say it's more sociology cum semiotics tbh and very much closer to philosophy.

It's a little much to explain in detail but it's like the reality we experience is often not based on the fabric of reality, it's taken from other things that are like idealised versions of things in reality that we've internalised. It's like that trope joke of "do you remember when we did x" "wait wasn't x from [some old tv programme]".

In the 80s it got used as a kind of quality argument, that everything should look like on a picture postcard or on a brochure so as not to pop the bubble as it were, and that lead to a resurgence in things like AstroTurf and fake plants, you know because they're always as you expect they should be without too much maintenance.
