"Death Star" is pretty good until Midi-chlorians, maybe that whole book is an insider joke by Kevin Smith though, as it mostly handles free entrepreneurship on the Death Star.

Honestly rogue squadron, wraith squadron and I jedi both hold up pretty well. Stackpole is a good author. Allston might have done one of those.

There was also a really good one about a clone soldier named N8. And the delta squad/omega squad one by traviss was decent even if she usually sucks.
