I don't know about great, but I can tell you some that I enjoyed.

>Darth Bane Series
Fun book about an anti-hero. Bane is almost Lovecraftian in his quest for forbidden knowledge. Good lightsaber fights, doesn't try to be deep and be a social commentary like too many star wars books.

>New Jedi Order
All of the Yuuzhan Vong stuff is pretty cool. I like the breadth of the series too.

>Republic Commando
Worships the military a little bit, but good series about clone commandos and their exploits. Series was unfinished though, so expect not to get all the answers.

>Heir to the Empire
Classically good Star Wars novel. Every SW fan should probably read this once.

Star Wars isn't great writing, but some of the books are fun (others are pretty shitty though).

The Bane Trilogy is rather good, I also liked Dawn of the Jedi (there's one novel and a few comic books, haven't gotten to the comics yet).

Bane has really great characters, also it shows a very well presented side of the Dark side of the Force and he's not "evil" for being evil and he's not exactly "the bad guy" he's simply selfish and power-hungry.

Dawn of the Jedi has weaker characters but an interesting story, you need to read the comics to learn about the actual dawn of the jedis though, the novel is a prequel to them.

I don't think I need to mention Bane or Thrawn.

Republic Commandos starts off strong, although Traviss is a hack who lays on the 'fuck jedi; Mando superiority' too heavily.

Death Troopers is pretty awful, but still not a bad time if you want to see Imperial authority break down.
Allegiance could also be good, although I read it over a decade ago.
