I feel a little like I'm just spamming up the board with mentions of WTV books these days, but Riding Toward Everywhere talks about them a lot and also talks a lot about books that are directly about what you're after. Some key cuts: A bunch of Mark Twain, 'Hobo: A Young Man's Thoughts About Trains and Tramping in America' by Eddy Joe Cotton and a compilation of Jack London's writing.
