Started reading the triology again and I've only just realised its taken half of the Fellowship of the Ring for them to even get to the prancing pony

Yeah it's a bit descriptive, but a fine read alright.

I don't understand the part about Bombadil. They get caught by some evil wizard and then he saves them? Who was that wizard and what did it have anything to do with the story?

I wouldn't get rid of Bombadil. The payoff is when he gives his speech that starts "Don't you know my name yet? That's the only answer." He is a mysterious benevolent force. His existence is a reminder that the world is fundamentally good.
