What are some good books about cooking?

Not shitty recipe books like what /ck/ recommends, books about the theory and techniques of cooking. I need to eat to make actual gains.

If you like the bible, tao te ching (religious books)... search "Self-enquiry" or "Ramana Maharshi" (a Hindu) it's the king of them all, imo.
