Are you asking about canons or translations? There are multiple translations of the tanakh and quoran. There are multiple canons in judaism too.

If you're talking about translations obviously there's gonna be a crap ton. The new testament canon is consistent with all branches of Christianity. The old testament has some variation in what books exist. As for content the manuscripts aren't that varying and it isn't a stretch to say the varying versions are both inspired. The Bible isn't viewed the same as the Quran anyways. The Quran is viewed as a literal dictation by God. The Bible is a collection of inspired texts by various prophets, patriarchs, kings, and apostles over thousands of years.

I'm an atheist who hasn't read a single version of the Bible all the way through and even I know the differences are tiny. Prots have the narrowest canon, Catholics have the same with a few books more, Orthodox are again Cath + several additional books.
And as far as I know nothing too essential with regards to the actual doctrine is found in those books that differ across the denominations.

Read the Douay-Rheims version lad if you want to be traditional. Protestantism is heresy, and the only true church is the catholic church. So get yourself a catholic bible, done. Word on Fire has amazing looking Bibles, but they are the New Revised Standard Version: Catholic Edition (NRSV-CE). More readable than the DRB, so maybe that is more appropriate for you anyway.

RSV is the least contested and least controversial 20th century English translation. For someone who doesn't intend to study in depth, doesn't want to read KJV, and only wants to experience the stories this is the best one. KJV has had a huge influence on English and English literature so its historical importance makes it worth reading from that angle. These two are all any one average person will need if they don't intend to be a lot more scholarly about reading the Bible.
