Non-english here, is there a rule to help with the pronunciation of words you don't know?

Example: ð (father) vs θ (thigh), or æ (latter) vs eɪ (later) – although in this case I know the single/double 't' is what's making the difference, but I can't think of a better example. I think that's the two things I've always difficulties knowing which one is correct, but apart from looking it up in a dictionary…

Pronunciation of English words is incredibly inconsistent. It's why that Pitman guy who invented Pitman's shorthand made a phonetic "Initial Teaching Alphabet" where you can tell exactly how something's pronounced from how it's spelt.
