It's a well known phrase in the German language although I'm not really sure why. Everyone knew it before Harry Potter was written. I've always felt the stone of knowledge was a better direct translation.
While der Weise is a wise man and die Weisen are the wise men, Weisen and Wissen have the same roots. Wissen is to know or knowledge. Wissenshaft is science and Ich weiß is I know. I'm wrong since the Salmon of Knowledge from celtic mythology is der Lachs des Wissens, but it's interesting that two mythology objects became der Stein der Weisen and der Lachs des Wissens.
