I’m pretty sure EoE is not explaining what’s going on outside of Shinji’s head in the last 2 episodes but is an alternate to the last 2 episodes. In one he accepts instrumentality and in the other he rejects it. That seemed pretty clear to me if you pay attention to the recurring themes and imagery.

It is because of its association to this website and people not good at looking into details. Also due to the creator's input of the work. People come off that he didn't know what he was doing and just made up stuff on the fly. Although they don't understand the context of the moment he created it. He had an occultic epiphany and went hard with Freudian and Jungian concepts.

Evangelion is literally just a Hermann Hesse novel. Individual lost in life and has to find meaning in it through spirituality.

The only redeeming quality of EoE is komm süsser tod. The rest of the film was unnecessary because it was all implied in the last two episodes briefly. You don't need to know what's going on outside of shinji's mind because the point of the entire show was to show his growth and development. To see his realizations of how relationships work in real time in the last two episodes were beautiful. But the fans wanted a 'real' ending because they don't understand satire of the genre, so instead we get the director antagonizing his fans by having the MC cum on the body of the underage girl, which the fans didn't even get and went on to make porn out of.

I'm convinced that anyone who prefers the TV ending has actual autism or at least struggles with reading social cues and/or subtext. Not only is it an obvious stopgap due to Gainax running out of time, but the actual dialogue is an hour's worth of the characters looking directly into the camera and explaining their feelings to the viewer in the clearest and least subtle way possible. It's just a recap and extrapolation of all the character development that's gone on up to that point, but without any nuance whatsoever. Maybe this is mind-blowing or helpful if you have Asperger's, but for everyone else it's just tedious. What makes the TV ending even more offensive is that the storytelling in Evangelion is actually fairly subtle for an anime, but that all goes out the window in the last two episodes.

The lord of the rings was about the hero's journey in a world that had been extensively built, with long histories and even new languages. But the book itself is about the journey, the characters, the idealistic fight between the light and the dark.

Autistic kids wanted to know every god damn detail behind the story like it was a set of blueprints behind every train in thomas the tank engine as to why they had accents. Something to take apart and over analyze the things behind the scenes. The need to continue and perpetuate their escapism. That is the Silmarillion. It was unnecessary, just like EoE was. It's for autists to cope with the fact that the main story is an emotional one, one they would have to work hard to understand, and they would rather learn the names of all 151 pokemon and list the exploits of Calendar Man and Captain America, then come to terms with what those stories mean.
