It's his Magnum Opus and the pressure to produce a satisfying conclusion must be overwhelming, especially after how disappointed fans were with the TV show.

Also, I wonder to what extent he treats ASOIAF as his life's work, and that by finishing it he feels closer to his own mortality. Finishing ASOIAF closes a chapter on his life that he's probably reluctant to let go.

GRRM is a full-time author unlike Tolkien, as the other anon pointed out. Also, GRRM has been writing ASOIAF for 24 years and it still isn't done. I spoke with Elio Garcia myself on this, and he believes it was still written by Ramsay. Him being George's bff makes me doubt myself, but there are simply too many mistakes in it for it not to be a farce. He also believes the wine is poisoned by Olenna in the Purple Wedding, which says enough as it is.
