on a micro level, they just have a lot of avenues to make metaphors out of. growth, wilting, the fact the previous two are based on exterior factors (sun, rain, age, etc), roots, their variety, the specifics of each variety, they're phallic in nature if you wanna go that route. etc

on a macro level, they've existed since the dawn of time, they're a facet of life such that it's nigh-impossible for humans to go their whole lives without seeing one.
moreover they existed at times when humans capable of writing poetry had fuck-all that you could draw such a large (previously described) well of inspiration from.
