In most cases there was no demographic displacement. The only place that really seems to have happened is central europe where first slavs moved in after Germanic tribes moved south and then later German settlers moved further east and out bred/overwhelmed the slavs.

In all other cases it happened by a replacement of the elite class where new rulers impose their customs and language on the common people creating a new culture and identity.
