Are there any good Gnostic novels? I'm trying to explain the concepts to my wife, but the primary sources are pretty dry and philosophical.

just have your "wife" read the Apocryphon of John, anon. it's practically the gnostic initiate's handbook and gives a lucid albeit very dense and long-winded rundown of the gnostic cosmology, as well as some of the basic soteriological conceptions toward the end. then move onto the gospel of thomas if you feel like engaging some of the more cryptic material.
alternatively there's a gnostic fiction somewhere in the back of my mind but ill have to do some digging to figure out what it is because my recall hasn't been all that great lately

Its fairly simple - metaphysical dualism is false because matter does not exist - being and goodness are convertible and thus evil-itself does not exist; only increasing/decreasing grades of perfection/goodness.
And since the One cannot emanate a second principle (the one which creates the cosmos) which does not share in its own likeness
thus the creator of the world is good and its creation too is good.

This is a gross simplification but it think if one reads the Proclean propositions (elements of theology) and reads Plotinus or even Augustine Gnosticism seems to have quite the insurmountable intellectual challenge.

What is the definitive way to read the Nag Hammadi in English? I've been meaning to read through the Nag Hammadi Library for a while, but I recall that multiple sections of the only scriptures found were missing several passages because they were destroyed or illegible.
