I think the ending to Guards! Guards! is the best ending of the entire series but my fav character is Death.

Going Postal is a personal favorite of mine, too.
Vetinari is my favorite character hands down, always gets me laughing, sometimes in a sad way. He's the biggest source of black humor in those books. Even Death is usually more silly than bleak or sardonic.
