Nyx is more often invoked or mentioned than featured, she's closer to a primordial force than a goddess, much like the Mother-Earth Gaia which is sometimes fused with Nyx.

However she features proeminently in Hesiod's Theogony (and most other classical theogonies, including the Orphic theogonies) as well as in the Oresteia, through her children (especially in the last part, the Eumenides). She's briefly mentioned in the Iliad when Sleep flees from Zeus' anger into the skirt of his mother Night, which stops the Olympian King as even he won't dare touch her.

In a sense she is almost a theme more than a character. So anytime the infernal or chtonian gods are involved (including infernal versions of the Olympian like Hermes Chtonian), including Tartaros, Hades, Erebos, Hecate, the Parques, Thanatos, Hypnos, the Erinyes, etc. she is looming on the background.
She is also often associated with gods of ecstasy, love and terror, especially female divinities, so that includes Dionysos, Artemis, Aphrodite, the Muses...

Dormitions (divinations by dreams) are in her precinct, for instance when Prometheus in Aeschylus' Prometheus Bound lists every major form of divination in order of age, starting with divination by dreams, that is a subtle reference to the ancient status of Night in the oracular line.

In some versions of the mythology of the Delphes oracle, Appolo steals the oracular seat from Themis, granddaughter of Night/Earth, to which Night responds by sending prophetic vision to all mortals in their dreams (essentially flooding the market with oracles and rendering Appolo's magisterium irrelevant). Zeus then abolishes oracles by dreams in order to keep creation at peace and to free the mortals from the terrible burden of constant nightly visions.

It's a very nice myth, unfortunately the (modern) scholar I'm reading doesn't give the ancien source for it. At any rate there seem to be a lot of them. You can contrast it with Aeschylus' take on Delphes at the beginning of the Eumenides, where the Pythie names, in order, the successive oracle-givers: Earth, Themis, Phoibe, Appolo, each having gotten the magisterium peacefully.

Robert Graves in his monumental The Greek Myths writes a lot about the many aspects of Triple Goddess, of which Night is the prototype in a sense. His retelling of the myths his mostly solid, however his commentary should be take with a truckload of salt. He's still worth a read imo (plus nowhere else are there as many myths crammed in a single book).
