If you haven't already then read his short stories, they're the only material which he actually put out during his lifetime, and therefore are finished unlike something like the trial or the castle, and in my so very 'umble and lowly opinion, are the best things he ever wrote.

Anna Karenina is the best starter. Although The Death of Ivan is a short story and very good but not a masterpiece.

Start with Ivan if you want to dip your toe in the water, but you might as well go head first into Anna Karenina
