I had this problem too. I learned it out of genuinely loving the language and hated these animefags. You kind of just have to live with it and shut their anime talk down right away. Just a direct "I don't watch anime" works well enough for me.
Having said that, don't actually refuse to watch anime outright as a learner of Japanese since it is actually a very good tool to pick up on conversational Japanese more quickly. Just refuse to engage with weebtalk.

I mean, I have watched some anime just like pretty much everyone, but I have a genuine interest in the language, mainly for the poetry, but it is all these filthy anime lovers who flock towards the lessons, the Japan expo and all the other things that would be cool if it wasn't for them.

I made this mistake, I started learning Japanese in university after I found a few European languages too boring. Was going to do Chinese but I hated the way it sounded and I was even a little pissed off by the way the characters were oversimplified. I resolved upon meeting the people in my Japanese class to never watch anime. I still haven't.

Today I still can't speak properly. If you're outside Japan, you must consume Japanese media, there's no other way to learn, it's just too hard otherwise. Maybe watch other TV shows instead though. Fuck anime.

There's a lot of cringy people in the anime fandom but if you really don't want to watch anime or read manga just ignore them. But if you are learning Japanese I think you should try to watch some anime or read some manga. There's plenty of good stuff there. And a lot of it is probably unwatched/unread by spergs signing up to learn Japanese to watch anime.
