I'm currently learning french, and after a couple months of immersion and using some language apps, I am able to somewhat follow along Houellebecq-level prose (I am reading Lanzarote right now). Those of you who have learned a language in the span of a year max, how fast am I going to improve from this point on in terms of understanding the language ? I just feel like I have progressed pretty fast but I am afraid of hitting a plateau

I studied french for 4 years at l'Alliance Française without putting too much effort in and I learned a lot.
I'd say what you do with French outside of class is just as important because it cements everything you've learned. I realise this now in hindsight and maybe that's the reason I couldn't really speak it too well 2,5 years in.

I learned French in one year. I attended two courses, one semester each, of French at my university. We covered the A1 and A2 level books, respectively. The prof was pretty good but if you want to learn on your own I guess you can look for the books' PDF and audio files online and go through it yourself. Alongside I watched Easy French and other popular youtubers for French learning (innerFrench, StreetFrench.org, French in Plain Sight, etc, there are a lot). At the end of the year I centered around spoken French. I remenber I had a pretty big breakthrough thanks to this YouTuber who centers around spoken French, his channel is called The Language Geek - Fred Grün. His videos are incredibly helpful and I wish there were videos similar to his for all languages. After this breakthrough, I started watching YouTube videos intended for a French speaking audience. I'd watch French vloggers (specially qt girls like Anastesa, La Caroligie, etc) and my favorite, this youtuber called Loris Giuliano, pretty funny guy, doing street interviews on people. He's pretty helpful because he put subtitles in pretty much all his videos. And he and the people he interviews speak like, real French, the one you'd actually hear in France. So with him I learned the true spoken French, their expressions, etc.
Then, I went to Europe for one month. I spent like 3 weeks in France. I spoke with real French people. Even invited a French girl to go out with me. Bought like 30 French books, and came back. I could read L'étranger easily, I could read Un homme qui dort, quite easily. That's my current level, more or less. I can also listen to podcasts in French now, I like these feminists podcasts, I think they're pretty good, "Podcasts à soi" is one, and the other one is called "Les couilles sur le table". Of course you won't like those if you get triggered by "muh SWJs" lmao but the ARTERadio podcasts are pretty varied.

(mother tongue is Spanish btw)
