Yellowing of pages has a lot to do with the humidity and temperature of your place. They should be in a dry and moderate place. Certainly not in a refrigerator.

Accept yellowing. The books don't have to last forever, they only have to out last you. They'll all be donated to a Goodwill or sold for basically nothing as soon as you die, because almost nobody values these books but you. Almost nobody is aware they exist but you. Normies don't read. Best case someone you actually know will grab 1 or 2 of your books, throw them on their shelves and never open them.

Do you really care if your old books get $3 a piece after you die, or $5 a piece?

you shouldn't need a reason to keep your books in the refrigerator you should just keep doing it because it's a cool thing to do with your books.
