In John 1:1 we translate the verse as "In the beginning was the Word, and the Word was with God, and the Word was God." but truthfully, this is a criminally bad translation.
It's not 'Word' but the Greek metaconcept of 'Logos'. According to New Testament Christianity God is something the Greeks had effectively discovered and been trying to understand since the days of Heraclitus of Ephesus.

The Roman Empire was a victim of its own success just like any other civilization. It fell into decadence and corruption. The Byzantine Empire survived quite a while after the West fell. To reduce it to the conversion of Christianity is reductionist. Even then, after Rome fell European civilizations eventually flourished and they were Christian and very influenced by Rome.

The Roman era and the preceding Hellenistic era were a highly syncretic time for culture and religion. It was fairly common for people in the west to adopt eastern deities and vice versa. One prominent example is the cult of Isis which was a mystery religion. These mystery religions were one of the primary forms of religious worship in the Hellenistic world and Christianity shares many of their qualities though is not considered to be one of them. So it's not hard to see how Christianity came about and why it spread around the empire. But I'd say it really caught on due to its emphasis on community, promise of eternal life, and the fact that its disciples were fanatics.

However, before the time of Constantine it was still just a minor religious movement among many floating around at the time and didn't grow until popularity until after he legalized and promoted it. In fact, I think it was still only followed by a minority of people when Theodosius made it the only religion in the empire but I might be wrong. As for why Constantine chose Christianity over other religions I don't know but maybe some other anon knows.

In to this vacuum Christian communities stepped in. The local bishop would collect ransom money for fellow Christians from his flock. The bishop would gather the founds to repair the town walls and keep the barbarians out. The congregation could pool together food to feed the community as the global trade network of the Roman Empire began to disintegrate in the chaos. As the safety net of the Roman state collapsed the church provided a new safety net.

Christianity's entire theological though is built upon greek philosophy, as well as their morality (christian morality has more to do with the Stoics and the Neoplatonics than the Jewish).

The OT isn't the basis of Christianity, the NT is, particularly the Gospel of John (written in greek using greek philosophical terminology) and the Pauline epistles. Some early christian sects even attempted to abandon the OT entirely, while the Greek Fathers had to do some mental gymnastics in order to make the OT compatible with the NT.
