Reciting these formulas, regardless of the individual's understanding them, is supposed to have some metaphysical effect. In many confession booths it is literally 'spelled' out for you on z plaque. Are there any scholarly works that examine the mechanics of holy language?

Proper prayer is about orientation of the soul towards God in the inner feeling. The actual words used or said are unimportant and can be left out altogether.
But to get off my soapbox and answer the question you're looking for, Pater Nosters and Hail Marys—I don't have any scholarly suggestions but you'll have to keep in mind the John 1:1 axiom that Christ is the Logos, the Word spoken by the Father. That is, the act of speaking holy words is deeply connected to the very interrelationships of Trinity itself. Speaking holy words thus is parallel to breathing out the Son. The Holy Spirit proceeds from the Father and the Son in Western tradition, and so we understand that in this interplay between self and spoken word arises the Holy Spirit, and that this is the goal of the recitation.

No. Lots of people do though, I met a Hebrew scholar once who made a living repairing Torah scrolls, very serious work, we talked and he said that based on the text of Genesis God actually spoke Hebrew. Heaven knows the Jews still don't say YHWH, and even write G-d to this day. Many Christians attribute near-magical significance to their prayers as well. Myself, I think the right Christian attitude is to walk in the newness of spirit, and not the oldness of letter--the words are meaningless, their intent or meaning is everything. Believing specific words have power is just magical thinking, in my opinion.
