Tristram Shandy is the funniest book I've read, but I think my translation of Don Q is shit, and I've never read Gargantua and Pantagruel.

Dog of the South by Charles Portis is one of the funniest books I've read. Also A Confederacy of Dunces obviously.

get edith grossman translation and read up on amadis of gaul and general works of chivalry for best effect, but you can still laugh without the research

I'll second/third/Nth Don Quixote. It's not a ripping laugh the entire time, despite being a walking parody he The Don can still be very serious, but it has a good balance between dramatic and comical atmospheres.
>that moment when sancho is standing in the dark literally shitting himself and the Don asks what that strange smell is

Based on a True Story by Norm Macdonald is hilarious if you're a fan of his.I still think it would be funny if you didn't know much about him.

Don Quixote and A Confederacy of Dunces, like everyone keeps saying. I'd also add The Good Soldier Svejk, which doesn't get nearly enough love here.
