Stop fetishizing the idea of a literate woman.
Most women don't read, and those that do usually read for simple pleasure and entertainment. There's nothing inherently wrong with that but everything about this discussion stinks of presumptions to an ideal literati.
If she hasn't expressed an interest in reading prior to your dating her you aren't going to make some fundamental change to her interests and hobbies. In my opinion that's not a problem.
