Brothers Karamazov is my favorite. The Life of Elder Zosima chapters left a strong impact on me when I first read it, and it's one section I come back to re-read often. Most of Ivan's chapters (Rebellion, Grand Inquisitor, Devil) were very good as well, though the Devil one went over my head a bit.
The only one I have yet to read is Demons. Gonna start that pretty soon.

I dunno, Brothers Karamazov helped me out of a similar slump. Could work for you, it's currently my favorite book of all time though I'm not very well read yet
