I'll drop my 2 cents here and try to mention stuff that wasn't already.

Vinland Saga up through Farmland is great and definitely worth a read.

Dungeon Meshi is an original fantasy work inspired by old tabletop and doesn't fall into traps others do.

Made in Abyss is worth a check for the setting alone which regretfully gets skipped over the longer it goes on. Still worth looking into for that and it's strong characterization.

Jitsu wa Watashi wa is like great comfort food. It won't challenge your ideals, try to teach you things you didn't know, or set out to shock you. Simple romcom done REALLY well with very few shortcomings.

Wombs is probably the most 'book-like' manga on this list. An original sci-fi world that explores what it's like to be a pregnant soldier.

Spirit Circle/Biscuit Hammer/Sengoku Youko. There's a running joke that each of these are better than the other and it's true because they're all very different and have shortcomings that annoy some people more than others but at the end of the day they're all great and deserve to be read. Spirit Circle is the best, fite me.

Although it's been mentioned already I strongly suggest Punpun. It's a very insightful look into self-loathing supported by strong art and characterization.

For anime I suggest Nagi no Asukara.
