The joke isn't funny in either circumstance, but "Pickle Dick" does not make sense if Rick is a whale in this instance. Pickles aren't even in the equation; unless you are suggesting that Rick had became Pickle Rick, then right afterwards Pickle Rick became Pickle Dick. This requires context the OP has not provided; it is more likely that this is an alternate scenario based on the original Pickle Rick scene where Morty is surprised with Rick's transformation into a inhuman object, but in this case with the change of the object being the pickle into Moby Dick. No pickles are involved in this scenario so Rick to mention any pickles is nonsensical.
