Let's say a monolingual knows exactly what languages he wants to learn. Is he better off learning them one at a time or all at once?

I'm looking for advice on learning new languages. I could just google it, but strangely enough I trust /lit/s opinion more. Do any books give advice for becoming bilingual? I'm an English only speaker and want to start reading a whole bunch of languages. Specifically Latin, Ancient Greek, and Vedic Sandskrit. If you have any book reccs about those specific languages, that'd be great too.

How do you fellas keep track of your references? I've highlighted and underlined so many important passages in various essays, textbooks and other academic work, but I'm really unorganized when it comes to actually finding what I need when I'm writing some sort of paper.
