If you consider La Celestina as medieval, it is. Also of that period Prison of Love by Diego de San Pedro is interesting, it's in the Bloom's canon.
But the best medieval Spanish literature is in valencian/catalan.
Tirant lo Blanc and Curial e Güelfa my favourite. Also in catalan there's an interesting unique author, Ramon Llull.
