What are the best books on ploting if I want to write a long book with multiple characters and story-lines, like War and Peace?

In short: books that help one structure a multi-plot novel.

I'm not saying I can write something as good, but I like the idea of those long works that deal with the live of several different people.

the worst part of this whole novel was the fact every interaction and conversation was backed with genuine emotion and intellect put into their thoughts and words. there is no way i could imagine any other conversation going down than "oh okay" and someone looks back down at their phone
