you're implying the book of genesis was written in modern english.
going back to the original language of it wouldnt cut it either, as the torah (first five books of the ancient testament) are mere (mis)translations of sumerian tablets. (of the epic of gilgamesh if i recall correctly)

the Genesis narrative may have been taught as meaning "7 DAYS" to generations of christians, it doesnt infer that that's what is really in the original texts and therefore christianity itself shouldnt be evaluated by that standard.

there's plenty of bullshit and lies passed around as true doctrine, who are you talking about anyway? which denomination? even inside one denomination there are contradicting theories being passed around.

and the text itself has various translations and commentaries.
